Bisquits & Gravy

Ingredients

Dough:
2 cups all-purpose flour
1 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons salt
1 and 1/2 teaspoons sugar
8 tablespoons unsalted butter
1 cup half & half

Sausage Gravy:
1 lb breakfast sausage
1/4 cup all-purpose flour
2 and 1/2 cups whole milk

Instructions:

Preheat oven to 450 degrees.

Make the dough: Cut butter into 1/4 inch cubes, place in a chilled bowl and place in refrigerator. Combine flour, baking powder, salt and sugar in a medium size bowl and mix ingredients with a wisk. Mix the butter cubes into the dry ingredients pressing the contents together with a spoon. Do not overmix. Add half & half, begin mixing with a whisk, then switch to a spoon. Mix until all ingredients are incorporated but again, do not overmix. Transfer dough to a lightly floured surface and press dough into a rectangle roughly 6" x 10". Fold dough in half, turn and press into a rectangle again. Fold again and press dough back into a 6" x 10" rectangle. Use a knife to cut dough into 3" x 2" pieces or stamp out pieces using a bisquit cutter. Place pieces on a lightly oiled baking sheet and bake for 12 to 15 minutes (check after 9 or 10 minutes).

Make the sausage gravy: Brown sausage over medium heat breaking into small pieces using a heat resistant spatula or meat chopper. After sausage is browned, reduce heat to low and sprinkle flour over the meat and mix using a whisk. Increase heat to simmer and slowly stir in whole milk. Increase heat to medium high, continue stirring until the mixture begins to boil then reduce to simmer. Add salt and pepper to taste, continue stirring until the mixture thickens being careful not to scorch. Remove gravy from heat, ladle gravy over biscuits and serve.
